Ingredients

  • 1/4 cup caster sugar
  • 1/3 cup honey
  • 1/2 cup orange juice
  • 1 cup boiling water
  • 6 beurre bosc pears, halved, cored (leaving stems attached)
  • 5 long strips orange rind
  • 1 cinnamon stick
  • 3 cardamom pods, bruised
  • 5 whole cloves
  • 1/2 cup plain Greek-style yoghurt
  • 1/3 cup pistachio kernels, toasted, chopped

Method

  • Step 1 Preheat oven to 200C/180C fan-forced.
  • Step 2 Place sugar, honey, orange juice and boiling water in a heatproof jug. Stir until sugar dissolves.
  • Step 3 Place pear, orange rind, cinnamon stick, cardamom pods and cloves in a 12-cup-capacity roasting pan. Pour over honey mixture. Turn to coat. Roast, turning and basting pear twice during cooking, for 50 minutes to 1 hour or until pear is caramelised and tender.
  • Step 4 Serve pear and syrup with yoghurt and pistachios (see notes).
