Ingredients

  • 12 chicken tenderloins
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1/4 small red cabbage, hard core removed, finely shredded
  • 1 carrot, peeled, coarsely grated
  • 2 shallots, trimmed, thinly sliced
  • 12 Bake at Home Petit Pain Rolls
  • 2 tablespoons whole-egg mayonnaise
  • 2 teaspoons fresh lemon juice

Method

  • Step 1 Place chicken in a glass or ceramic dish. Combine soy sauce, honey and oil in a bowl. Pour over the chicken and turn to coat. Cover and place in fridge for 8 hours or overnight to marinate.
  • Step 2 Combine the cabbage, carrot and shallot in a large bowl.
  • Step 3 Bake the rolls following packet directions. Combine the mayonnaise and lemon juice in a small bowl. Add mayonnaise mixture to the cabbage mixture and toss to combine.
  • Step 4 Preheat a barbecue grill or chargrill on medium. Add chicken and cook for 5 minutes each side or until cooked through.
  • Step 5 Cut the rolls lengthways (don't cut all the way through). Divide the coleslaw and chicken among the rolls to serve.
