Ingredients

  • 1 litre apple juice
  • 1/2 cup caster sugar
  • 3cm piece fresh ginger, peeled, sliced
  • 1 tablespoon black tea leaves
  • 1/4 cup mint leaves, chopped
  • Ice cubes, to serve
  • Mint leaves, to serve

Method

  • Step 1 Combine apple juice, sugar and 2 cups cold water in a saucepan over medium-low heat. Stir for 3 to 4 minutes or until sugar has dissolved. Add ginger. Bring to the boil. Reduce heat to low. Simmer for 5 minutes.
  • Step 2 Remove from heat. Stir in tea leaves and chopped mint. Stand for 10 minutes. Strain into a jug. Cover and refrigerate overnight or until chilled. Serve with ice and mint leaves.
