Ingredients

  • 4 (about 180g each) beef scotch fillet steaks
  • 60ml (1/4 cup) teriyaki marinade
  • 2 tablespoons light olive oil
  • 2 x 200g pkts udon noodles
  • 1 x 400g pkt Asian Stir-fry Vegetables
  • 60ml (1/4 cup) Hakubaku Chilli Soy Noodle Sauce
  • 3 shallots, ends trimmed, thinly sliced diagonally

Method

  • Step 1 Place the beef in a large glass or ceramic dish. Pour over the marinade. Turn to coat. Cover and place in the fridge for 5 minutes to marinate. Heat 1 tablespoon of oil in a large non-stick frying pan over medium-high heat. Add the beef and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil to keep warm.
  • Step 2 Meanwhile, place the noodles in a colander. Rinse under cold running water. Separate the noodles. Drain.
  • Step 3 Heat the remaining oil in the pan. Add the onion from the vegetables to the pan. Cook, stirring, for 3 minutes or until onion softens. Add remaining vegetables and stir-fry for 3 minutes or until vegetables are tender crisp. Add the noodles and sauce, and stir-fry for 2 minutes or until heated through. Thinly slice the beef diagonally across the grain. Divide the stir-fry among serving bowls. Top with beef and shallot to serve.
