Ingredients

  • 1/4 cup oyster sauce
  • 2 tablespoons dry sherry
  • 2 tablespoons peanut oil
  • 500g lamb fillet, trimmed, thinly sliced
  • 2 fresh long red chillies, seeded, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 teaspoons grated ginger
  • 1 bunch broccolini, trimmed, halved
  • 4 green onions, trimmed, sliced
  • 1/4 cup chicken stock
  • 350g pkt fresh thin egg noodles

Method

  • Step 1 In a small bowl, combine oyster sauce and sherry.
  • Step 2 Heat half the oil in a wok or large frying pan on high. Stir-fry lamb in two batches for 1-2 minutes until browned. Transfer to a bowl.
  • Step 3 Heat remaining oil in a wok. Stir-fry chilli, garlic and ginger for 1 min. Add broccolini, onion and stock. Stir-fry for 2-3 mins until broccolini is tender.
  • Step 4 Return lamb to wok with sherry mixture and noodles, then stir-fry for 1-2 mins until heated through.
