Ingredients

  • 8 lamb cutlets, trimmed
  • 1 tablespoon olive oil
  • 2 teaspoon ground coriander
  • 2 teaspoon ground cumin
  • 8 button mushrooms, quartered
  • 2 zucchini, halved, thinly sliced
  • 2 onions, cut into eighths
  • 1 red capsicum, seeded, thickly sliced
  • 1 cup couscous
  • 1 cup hot vegetable stock or water
  • 3 green onion, sliced

Method

  • Step 1 Brush cutlets with half the oil and toss in combined spices. Arrange on a tray and chill until required. Preheat char-grill on high.
  • Step 2 Couscous: Place couscous in a bowl and pour stock over. Cover for 5 mins until stock is absorbed. Fluff with a fork. Season to taste and mix onion through.
  • Step 3 Brush vegetables with remaining oil and char-grill 1-2 mins each side. Toss through couscous. Char-grill lamb for 2-3 mins each side and serve with couscous.
