Ingredients

  • 1 large (400g) eggplant, thinly sliced lengthways
  • 60 ml (1/4 cup) olive oil
  • 1 onion, chopped
  • 500g lamb mince
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 400g can chopped tomatoes
  • 420g can Heinz® Beanz Creationz™ Mediterranean Style Beanz
  • 2 potatoes, peeled, thickly sliced
  • 200g (2 cups) pizza cheese
  • Lemon wedges, to serve

Method

  • Step 1 Preheat oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper. Lay eggplant on trays and drizzle with 2 tbs of oil. Season well and bake for 10-15 minutes, until tender.
  • Step 2 Meanwhile, heat remaining oil in a pan on medium. Cook onion for 5 minutes, until softened. Increase heat to high and add lamb mince. Cook stirring constantly to break up any lumps, for 5 minutes, until brown. Add cumin and cinnamon and cook for 30 seconds until combined. Add tomatoes and Beanz Creationz™. Reduce heat to low and simmer, covered, for 10 minutes.
  • Step 3 Microwave potatoes on high (100%) power for 5 minutes, until tender.
  • Step 4 Grease an 8-cup baking dish. Lay potatoes over the base of prepared dish. Top with a layer of eggplant and half of the mince mixture. Repeat eggplant and mince layers. Scatter over cheese and bake for 20 minutes, until golden. Serve with lemon wedges.
