Ingredients

  • 750g lamb backstraps, cut into 2cm cubes
  • 2 bunches thin green onions (see note), cut into 2cm pieces

Soy marinade

  • 1 cup reduced-salt soy sauce
  • 2 lemons, juiced, strained
  • 1/2 cup mirin or sweet sherry
  • 2 tablespoons caster sugar

Method

  • Step 1 Make soy marinade: Combine soy sauce, 1/2 cup lemon juice, mirin and sugar in a small saucepan. Simmer over medium-low heat for 3 minutes. Remove from heat and set aside to cool.
  • Step 2 Place lamb in a large, shallow ceramic dish. Pour soy marinade over lamb, reserving 1 cup for a dipping sauce. Turn lamb to coat. Cover and refrigerate for at least 1 hour. Thread green onion and lamb alternately onto skewers.
  • Step 3 Preheat a barbecue grill on high heat. Cook skewers, turning and occasionally brushing with any remaining marinade, for 4 to 5 minutes for medium or until cooked to your liking. Serve with reserved soy marinade for dipping.
