Ingredients

  • 4 sheets frozen puff pastry, just thawed
  • 115g (1 1/3 cups) grated Colby cheese
  • 160g thinly sliced ham, coarsely chopped
  • 2 green shallots, thinly sliced
  • 60g baby spinach leaves
  • 125g (1/2 cup) chopped chargrilled capsicum
  • 1 egg, lightly whisked

Method

  • Step 1 Preheat oven to 220C/200C fan forced and line two baking trays with baking paper.
  • Step 2 Cut two sheets of pastry in half and place onto prepared trays, allowing room to spread. Sprinkle the cheese evenly over the pastry leaving a 1.5cm border. Top with the ham, shallot, spinach and capsicum. Lightly brush the border with the egg.
  • Step 3 Cut the remaining pastry sheets in half and place over the filling. Press the edges with a fork to seal. Brush the top of the pastry with egg, and then prick each parcel 4 times with a fork, to allow the steam to escape. Bake for 20 minutes or until golden brown.
  • Step 4 Cut each parcel into 3 pieces and serve as a meal, or cut into smaller pieces to serve as a snack.
