Ingredients

  • 1 1/2 cups caster sugar
  • 1/2 cup water
  • 1 cup reduced-fat milk
  • 2 cups Dairy Whip Lite Cream
  • 4 eggs
  • 1 teaspoon vanilla essence
  • fresh fruit, to serve

Method

  • Step 1 Preheat oven to 160°C. Lightly grease 6 x 3/4-cup capacity ovenproof moulds.
  • Step 2 Combine 1 cup of sugar and water in a saucepan over low heat. Stir until sugar dissolves. Bring to the boil. Cook until golden. Pour caramel into moulds.
  • Step 3 Heat milk and Dairy Whip Lite Cream in a saucepan, stirring. Bring to the boil.
  • Step 4 Whisk eggs, vanilla and remaining sugar in a bowl until pale. Whisk cream mixture into egg mixture. Pour over caramel.
  • Step 5 Place moulds into a baking dish. Pour boiling water into dish to come halfway up sides of moulds. Bake for 35 to 40 minutes, or until set. Refrigerate overnight.
  • Step 6 Turn onto plates. Serve with fresh fruit.
