Ingredients

  • 2 tablespoons olive oil
  • 1 brown onion, halved, thinly sliced
  • 1 teaspoon ground coriander
  • 1 cup basmati rice, drained
  • 2 cups chicken stock
  • 400g can lentils, drained, rinsed
  • 1/3 cup slivered almonds, toasted (see Notes)
  • 1/4 cup mint leaves
  • 4 small chicken breasts, trimmed
  • 3 garlic cloves, crushed
  • 1 teaspoon chilli powder
  • Zest and juice of 1 lemon
  • Baba ganoush, to serve

Method

  • Step 1 Heat half the oil in a medium saucepan on high. Sauté onion for 6-8 mins, until golden and tender. Add coriander. Cook for 1 min.
  • Step 2 Stir in rice, then stock. Bring to the boil. Reduce to very low and cook, covered, for 10 mins. Remove from heat. Stand for 5 mins. Stir in lentils, almonds and mint.
  • Step 3 Meanwhile, preheat a char-grill to medium. Place chicken in a bowl with remaining oil, garlic, chilli and lemon zest.
  • Step 4 Char-grill chicken for 5-6 mins on each side, until cooked through. Serve with lentil pilaf. Drizzle with lemon juice. Accompany with baba ganoush.
