Ingredients

  • 250g butter, chopped
  • 200g dark chocolate, chopped
  • 3 eggs, lightly whisked
  • 240g (1 1/2 cups, lightly packed) brown sugar
  • 1 teaspoon vanilla extract
  • 100g (2/3 cup) plain flour
  • 50g (1/3 cup) self-raising flour
  • 2 tablespoons dark cocoa powder, plus extra, to dust
  • 15 assorted Lindt Lindor chocolate balls, halved

Method

  • Step 1 Preheat oven to 160C/140C fan forced. Grease a 16 x 26cm (base measurement) slice pan and line with baking paper, allowing the sides to overhang.
  • Step 2 Melt the butter and chocolate in a saucepan over low heat, stirring occasionally. Set aside to cool.
  • Step 3 Use electric beaters to beat the eggs, sugar and vanilla in a large bowl until pale and doubled in volume. Stir in the chocolate mixture. Sift over the flours and cocoa powder. Gently fold to combine.
  • Step 4 Pour the mixture into the prepared pan. Bake for 35 minutes or until just set. Set aside to cool. Place in the fridge until firm. Use the paper to lift the brownie from the tin. Top with Lindor balls, cut-side down. Dust with extra cocoa powder.
