Ingredients

  • 1 avocado, stoned, peeled, chopped
  • 1 mango, stoned, peeled, chopped
  • 1/2 small red onion, finely chopped
  • 1 red chilli, seeded, finely chopped
  • 1 tablespoon finely grated lime rind
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 4 Coles Finest Australian Angus Beef Original Sausages
  • 4 hot dog rolls
  • 1/3 cup fresh coriander leaves
  • Sweet chilli sauce, to serve

Method

  • Step 1 Combine the avocado, mango, onion, chilli, lime rind and juice in a small bowl. Season.
  • Step 2 Heat the oil in a medium frying pan over medium heat. Add the sausages and cook, turning occasionally, for 8-10 mins or until golden and cooked. Transfer the sausages to a plate.
  • Step 3 Use a serrated knife to split the bread rolls lengthways, being careful not to cut all the way through. Fill the rolls with sausages and top with the mango avocado salsa. Sprinkle with coriander and drizzle with sweet chilli sauce to serve.
