Ingredients

  • 2 sheets frozen ready-rolled shortcrust pastry, thawed
  • 1 tablespoon apricot jam
  • 50g (1/3 cup) roughly chopped macadamias
  • Pinch ground cinnamon
  • 2 tablespoons maple syrup

Method

  • Step 1 Preheat oven to 170C. Grease a 12-hole mini-muffin pan. Use a 10cm-diameter round pastry cutter to cut 12 discs from the pastry. Place in the prepared pan (see note). Cover and place in the refrigerator to chill for 15 minutes.
  • Step 2 Spoon a drop of jam into the centre of each pastry case. Combine the macadamias, cinnamon and maple syrup in a small bowl, tossing to coat the nuts in the syrup. Spoon the macadamia mixture evenly between each pastry case.
  • Step 3 Bake for 15 minutes or until light golden and the pastry is cooked through. Serve warm or at room temperature.
