Ingredients

  • 2 cups (180g) rolled oats
  • 1 cup (250ml) pineapple juice
  • 1 cup (280g) mango-flavoured yoghurt
  • 1 teaspoon ground cinnamon
  • 1 mango, stoned, peeled, finely chopped
  • 1/4 cup (45g) pistachios, toasted, thinly sliced

Method

  • Step 1 Combine the oats, pineapple juice, yoghurt and cinnamon in a large bowl. Cover with plastic wrap and place in the fridge overnight to soak.
  • Step 2 Add mango and half the pistachios to the muesli mixture and stir to combine. Divide among serving bowls. Top with the remaining pistachios.
