Ingredients

  • Vegetable oil, to grease
  • 3 large oranges, peeled, cut into 1cm pieces
  • 1 x 85g pkt mango-flavoured jelly crystals (Aeroplane brand)
  • Whipped thickened cream, to serve

  • Melted butter, to grease
  • 5 large oranges, peeled, thickly sliced
  • 55g (1/4 cup, firmly packed) brown sugar
  • 40g butter, chopped

Method

  • Step 1 Brush six 125ml (1/2-cup) capacity metal or ceramic moulds with vegetable oil to lightly grease. Place moulds on a tray. Divide orange pieces evenly among the prepared moulds.
  • Step 2 Make the jelly following packet directions. Set aside to cool to room temperature. Pour jelly evenly among moulds. Place in the fridge for 2 hours or until jelly sets.
  • Step 3 To make baked oranges, preheat oven to 200°C. Brush a 1.5L (6-cup) capacity ovenproof dish with melted butter to lightly grease. Place the orange slices, overlapping slightly, in the prepared dish. Sprinkle evenly with sugar and dot with butter. Cook in preheated oven for 35 minutes or until the edges start to brown. Remove from oven and set aside for 15 minutes to cool.
  • Step 4 To serve, turn jelly out onto serving plates and serve with baked oranges and a dollop of cream.
