Ingredients

  • 3/4 cup caster sugar
  • 2 limes, juiced
  • 1 vanilla bean, split lengthways
  • 2 mangoes, peeled, cut into thin wedges
  • 1/2 papaya, peeled, cut into thin wedges
  • 1/2 small pineapple, peeled, cut into thin pieces
  • 1/2 cup mint leaves

Method

  • Step 1 Combine sugar, 3/4 cup cold water, 1/4 cup lime juice and vanilla bean in a saucepan over medium heat. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 4 minutes or until syrup thickens. Remove from heat. Refrigerate for 30 minutes or until cold. Remove vanilla bean (see tip).
  • Step 2 Combine fruit and mint on a shallow serving dish. Pour syrup over fruit.
  • Step 3 Cover and refrigerate for 1 hour, if time permits. Serve.
