Ingredients

  • 1.5kg boneless pork leg
  • 2 tablespoons sea salt flakes
  • 1/4 cup maple syrup
  • 4 strips mandarin rind
  • 1/3 cup mandarin juice
  • 1 tablespoon wholegrain mustard
  • 8 garlic cloves, unpeeled
  • 2 cinnamon sticks
  • 10cm piece fresh ginger, sliced
  • 1 cup chicken stock
  • 2 bunches broccolini, trimmed, halved lengthways
  • 3 mandarins, peeled, halved crossways
  • Crusty bread or mashed potato, to serve

Method

  • Step 1 Preheat oven to 240C/220C fan-forced.
  • Step 2 Pat pork dry with a paper towel. Rub salt all over pork. Place in a medium roasting pan. Roast for 30 minutes or until rind starts to crackle.
  • Step 3 Meanwhile, combine maple syrup, mandarin rind and juice, mustard, garlic, cinnamon, ginger and stock in a large jug.
  • Step 4 Reduce oven temperature to 200C/180C fan-forced. Add maple mixture to dish. Roast for 1 hour or until pork is almost cooked through. Add broccolini and mandarin to pan. Roast for 15 minutes or until pork is cooked through and broccolini is tender. Serve pork with crusty bread or mashed potato.
