Ingredients

  • 4 large mixed capsicums (such as red and yellow)
  • 2 teaspoons olive oil
  • 1 tablespoon baby capers, rinsed, drained

Method

  • Step 1 Preheat oven to 180°C. Place the combined capsicum in a large baking dish. Drizzle over the oil and turn to coat. Roast, turning once halfway through cooking, for 50 minutes or until charred and blistered. Transfer to a bowl and cover with plastic wrap. Set aside to cool slightly. Peel and seed the capsicums. Cut the flesh into 2cm-thick strips.
  • Step 2 Place the capsicum and any juices from the bowl in a serving bowl. Add the capers and toss until well combined. Season with pepper.
