Ingredients

  • 185ml (3/4 cup) marsala
  • 185ml (3/4 cup) water
  • 125g (3/4 cup, lightly packed) brown sugar
  • 18 (about 500g) fresh dates
  • 250g (1 cup) mascarpone
  • 1/4 teaspoon ground cardamom
  • 1 tablespoon brown sugar, extra
  • 12 savoiardi sponge finger biscuits
  • Savoiardi, extra (optional), to serve

Method

  • Step 1 Stir the marsala, water and sugar in a small saucepan over medium heat until the sugar dissolves. Slowly bring to a simmer and cook for 5 minutes. Add the dates and bring to the boil. Set aside for 10 minutes to macerate.
  • Step 2 Meanwhile, combine the mascarpone, cardamom and extra brown sugar in a small bowl.
  • Step 3 Strain dates through a fine sieve into a bowl, reserving the syrup. Dip 1 savoiardi into reserved syrup. Place in a serving glass, breaking in half if necessary. Top with a dollop of mascarpone mixture. Repeat with remaining savoiardi, syrup and mascarpone mixture. Divide the dates among the serving glasses and drizzle over the remaining syrup. Top with extra savoiardi, if desired.
