Ingredients

  • 150g (1 cup) plain flour
  • 1 teaspoon baking powder
  • 1 egg, lightly whisked
  • 120g feta, crumbled
  • 40g (1/4 cup) mixed pitted olives, chopped
  • 2 tomatoes, quartered, seeds removed, flesh finely chopped
  • 1/4 cup fresh basil leaves, chopped, plus extra, to serve
  • Extra virgin olive oil, to deep-fry
  • Garlic dip, to serve
  • Micro herbs, to serve (optional)

Method

  • Step 1 Whisk together the flour, baking powder and a pinch of salt in a bowl. Make a well in the centre. Add the egg and 2 tbs water. Stir until a stiff batter forms. Stir in the feta, olives, tomato and basil.
  • Step 2 Pour oil to come one-quarter of the way up the side of a wok or large saucepan. Place over medium-high heat. Heat oil to 160°C on a cook’s thermometer. Add 1⁄4-cupfuls of mixture to the oil. Deep-fry, turning halfway, for 3 minutes or until golden and cooked through. Drain on paper towel. Repeat with the remaining mixture. Serve with garlic dip. Sprinkle with micro herbs, if you like.
