Ingredients

  • 2 tablespoons olive oil
  • 2 small red chillies, deseeded, finely chopped
  • 1kg large green prawns, peeled, deveined (tails intact)
  • 180g prosciutto, cut into long thin strips

Method

  • Step 1 Place the oil and chilli in a medium glass or ceramic bowl. Add prawns. Set aside, covered, for 20 minutes.
  • Step 2 Preheat a barbecue plate on high. Thread prawns onto skewers. Wrap a strip of prosciutto around each prawn. Cook skewers, turning once, for 2 to 3 minutes, or until cooked. Serve.
