Ingredients

  • 6 egg whites
  • 1 1/2 cups caster sugar
  • 2 tablespoons cornflour
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1/4 cup Milo, plus extra to dust
  • 300ml thickened cream, whipped
  • 6 scoops vanilla ice-cream
  • 6 scoops Milo ice-cream
  • Chocolate sauce, to serve
  • Salted caramel sauce, to serve
  • Chopped pecans, to serve

Method

  • Step 1 Preheat oven to 120C/100 fan-forced. Grease and line base and sides of a 23cm round (base) springform pan.
  • Step 2 Using an electric mixer, beat egg whites and sugar in a large bowl on medium speed for 1 minute or until combined. Increase speed to high. Beat for 10 to 12 minutes or until mixture is thick and glossy. Add cornflour, vanilla and vinegar. Beat until combined. Fold in Milo.
  • Step 3 Spoon mixture into prepared pan. Bake for 1 hour 30 minutes or until crisp and dry. Turn off oven. Cool pavlova in oven for 2 hours with door ajar. Cool completely.
  • Step 4 Transfer pavlova, with baking paper, to a serving plate (pavlova will be quite fragile). Top with cream. Dust with extra Milo. Top with ice-cream, sauces and pecans. Serve immediately.
