Ingredients

  • 1 x 250g pkt Arnott's Butternut Snap Cookies
  • 1 x 300ml ctn double cream
  • 1 small banana, peeled, thinly sliced

Caramel

  • 1 x 395g can sweetened condensed milk
  • 70g (1/3 cup, firmly packed) brown sugar
  • 50g butter

Method

  • Step 1 Place 4 biscuits around the edge of a microwave turntable. Cook on High/ 800watts/100% for 50 seconds or until soft. Use a rolling pin to roll out each biscuit until slightly thinner. Press into four 40ml (2-tablespoon) capacity patty pans. Repeat with remaining biscuits.
  • Step 2 To make the caramel, use a wooden spoon to stir the condensed milk, sugar and butter in a medium saucepan over low heat, without boiling, for 15 minutes or until the mixture thickens.
  • Step 3 Divide the caramel among biscuit bases. Place in the fridge for 30 minutes to chill.
  • Step 4 Top with cream and banana.
