Ingredients

  • 3 cups self-raising flour
  • 2 teaspoons salt
  • 125g butter, chopped
  • 1/2 cup semi-dried tomatoes, drained, roughly chopped
  • 1 cup grated tasty cheese
  • 50g shaved ham, roughly chopped
  • 1 1/2 cups milk
  • extra flour, for kneading
  • 2 tablespoons sesame seeds

Method

  • Step 1 Preheat oven to 220°C?. Lightly grease a baking tray. Sift flour and salt into a bowl. Using your fingertips, rub butter into flour until mixture resembles breadcrumbs.
  • Step 2 Add tomatoes, cheese and ham. Stir with a wooden spoon to combine. Make a well in centre of dry ingredients. Add 1 1/4 cups of milk. Mix with a flat-bladed knife until mixture starts to come together (do not over-mix or dampers will be tough).
  • Step 3 Turn dough onto a lightly floured surface. Knead gently until smooth. Divide dough into 6 pieces. Shape each piece into a 3cm-thick round.
  • Step 4 Place dampers onto prepared baking tray. Cut a cross in top of each one. Brush lightly with remaining milk. Sprinkle over sesame seeds. Bake for 15 minutes, or until golden (dampers should sound hollow when tapped on base). Serve warm.
