Ingredients

  • 1.8kg leg of lamb
  • 2 garlic cloves, crushed
  • 1/3 cup mint jelly, warmed
  • 1kg Dutch cream potatoes, peeled, quartered
  • 1kg Kent pumpkin, cut into 3cm wedges
  • 2 tablespoons olive oil
  • Steamed green peas, to serve

Method

  • Step 1 Preheat oven to 180°C/160°C fan-forced. Lightly grease a large roasting pan. Place lamb in pan. Mix garlic into mint jelly then brush lamb all over with jelly. Season with salt and pepper.
  • Step 2 Roast lamb, basting with remaining jelly every 20 minutes, for 1 hour 30 minutes for medium or until cooked to your liking.
  • Step 3 Meanwhile, place potato and pumpkin in a large bowl. Drizzle with oil. Season with salt and pepper. Toss to coat. Add potato mixture to roasting pan for the last 40 minutes of roasting time, turning halfway through cooking.
  • Step 4 Remove lamb from oven. Cover loosely with foil. Stand for 15 minutes before carving. Serve warm with potato, pumpkin and peas.
