Ingredients

  • 4 (about 150g each) boneless white fish fillets
  • 2 tablespoons miso paste
  • 2 tablespoons orange juice
  • 2 teaspoons honey
  • 1/2 teaspoon soy sauce
  • 180g dried soba noodles
  • 2 bunches asparagus, halved crossways
  • 150g snow peas, thinly sliced
  • 1 teaspoon sesame seeds, toasted
  • 2 spring onions, thinly sliced

Method

  • Step 1 Preheat grill on medium-high. Place fish in a shallow baking dish. Combine the miso paste, orange juice, honey and soy sauce in a small bowl. Drizzle 1 tsp of the miso mixture over each fish fillet. Season. Cook under grill for 8-10 mins or until fish flakes when tested with a fork.
  • Step 2 Meanwhile, cook noodles in a large saucepan of boiling water for 4 mins, adding the asparagus and snow peas in the last 2 mins of cooking. Drain well.
  • Step 3 Divide the noodles, vegetables and fish among serving plates. Spoon over remaining miso sauce. Sprinkle with the sesame seeds and spring onion.
