Ingredients

  • olive oil
  • 300g mushrooms, washed, drained and thinly sliced
  • 4 rashers of bacon, thinly sliced
  • 8 eggs, lightly beaten
  • 1 tablespoon chopped basil
  • 1 tablespoon chopped flat-leaf parsley
  • 1 tablespoon chopped chives
  • salt and cracked black pepper
  • 1/3 finely grated parmesan
  • salad, to serve

Method

  • Step 1 Heat an oven grill until hot. Heat a little olive oil in a medium non-stick frying pan over medium-low heat. Add the mushrooms and bacon and cook for 5 minutes or until golden.
  • Step 2 Place the eggs, basil, parsley, chives, salt and cracked black pepper in a medium bowl and stir to combine. Pour egg mixture over the mushroom mixture.
  • Step 3 Reduce heat to very low and cook for 10-12 minutes or until almost fully set on top.
  • Step 4 Sprinkle with parmesan, remove from stovetop and place the pan under the preheated grill. Cook until surface is fully set and golden brown. Set aside for 5 minutes then slice and serve with a simple salad.
