Ingredients

  • 60g butter
  • 1 leek, white part only, thinly sliced
  • 3 garlic cloves, crushed
  • 300g sugar snap peas, trimmed
  • 300g green beans, trimmed
  • 2 cups (300g) frozen peas

Method

  • Step 1 Melt the butter in a large frying pan over medium heat until foaming. add the leek and garlic and cook, stirring occasionally, for 5 minutes or until leek softens.
  • Step 2 Meanwhile, cook the peas and beans in a large saucepan of boiling water for 2-3 minutes or until bright green and tender. Drain well.
  • Step 3 Add the pea mixture to the leek mixture and cook, tossing, until well combined and heated through. Remove from heat and transfer to a serving bowl. Serve immediately.
