Ingredients

  • 1 x 300g focaccia bread, halved, split
  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove, crushed
  • 60g baby rocket
  • 1 tomato, thinly sliced
  • 60g provolone cheese (see note), thinly sliced
  • 70g sliced mortadella

Method

  • Step 1 Lightly grill or toast both sides of focaccia. Combine oil and garlic. Brush over focaccia bases.
  • Step 2 Top bases with rocket, tomato, provolone and mortadella. Season with salt and pepper. Sandwich with focaccia tops. Serve.
