Ingredients

  • 100g (3/4 cup) natural oat bran (Lowan brand)
  • 150g (1 cup) plain flour
  • 55g (1 cup) finely shredded cheddar
  • 1/4 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 50g butter, melted
  • 5 tablespoons water
  • 200g Bass Strait blue cheese (King Island brand), to serve
  • Quince paste, to serve

Method

  • Step 1 Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper.
  • Step 2 Combine oat bran, flour, cheddar, bicarbonate of soda and salt in a bowl.
  • Step 3 Heat butter and water in a medium saucepan over medium heat until butter melts (see microwave tip). Set aside for 15 minutes to cool. Gradually stir into oat-bran mixture until well combined.
  • Step 4 Turn dough onto a lightly floured surface and gently knead until smooth. Use a lightly floured rolling pin to roll dough to about 5mm thick. Use a 7cm pastry cutter to cut 16 squares. Place on lined trays and prick with a fork. Bake for 25-30 minutes or until golden brown.
  • Step 5 Place biscuits on a rack to cool. Serve with blue cheese and quince paste.
