Ingredients

  • 2 x 307g packets chocolate bar variety mix
  • 2 1/4 cups self-raising flour
  • 1/2 cup Dutch-processed cocoa
  • 1 teaspoon baking powder
  • 1 cup brown sugar
  • 3 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 300g sour cream
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 3/4 cup thickened cream, whipped
  • Salted caramel sauce, to serve
  • Cocoa powder, to serve

Method

  • Step 1 Preheat oven to 180C/160C fan-forced. Grease and line base and sides of a 6cm-deep, 22cm round cake pan.
  • Step 2 Unwrap chocolates. Whisk flour, cocoa, baking powder and sugar in a large bowl. Make a well in the centre. Add eggs, oil, sour cream, vanilla and milk. Stir until almost combined. Add half of the chocolates. Stir until just combined.
  • Step 3 Pour into prepared pan. Level top. Bake for 1 hour to 1 hour 10 minutes or until a skewer inserted into the centre of the cake comes out with a moist crumbs clinging. Cool 10 minutes. Transfer to a wire rack to cool.
  • Step 4 Make Chocolate Ganache. Heat cream in small saucepan until just hot. Add milk chocolate. Stand 2 minutes. Stir until smooth. Cool 20 minutes.
  • Step 5 Trim top of cake to level. Place cake, cut-side down, on a serving platter. Spread top of cake with ganache allowing it to drip down the sides. Top with halved remaining chocolates, excluding m&ms. Spoon cream into a piping bag fitted with a 1cm fluted nozzle. Pipe cream around top edge of cake. Drizzle with caramel sauce. Dust with cocoa powder. Serve.
