Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves, crushed
  • 2 teaspoons chopped thyme
  • 250g vine-ripened cherry tomatoes
  • 2 x 200g Coles Graze Grass Fed Beef Porterhouse Steaks
  • 1 Coles Bakery Baguette*, split, halved crossways
  • 3/4 cup (185ml) Caesar dressing
  • 2 tablespoons finely grated parmesan
  • 120g pkt Coles Australian Baby Rocket
  • 1/2 red onion, thinly sliced
  • 1 avocado, stoned, peeled, thinly sliced

Method

  • Step 1 Preheat a barbecue grill or chargrill on medium-high. Combine the oil, garlic and thyme in a small bowl. Brush 2 tsp of the oil mixture over the tomatoes. Cook, turning, for 5 mins or until tomatoes are just starting to split. Transfer to a plate.
  • Step 2 Brush the steaks with half the remaining oil mixture and season. Cook for 3 mins each side for medium-rare, or until cooked to your liking. Transfer to a plate, cover with foil and set aside for 5 mins to rest. Thinly slice.
  • Step 3 Meanwhile, brush the remaining oil mixture over the cut-side of each baguette slice. Cook, cut-side down, for 2-3 mins or until lightly toasted.
  • Step 4 Combine the dressing and parmesan in a small bowl. Spread half the dressing mixture over cut-side of each baguette slice. Top with rocket, tomato, steak, onion and avocado. Drizzle with remaining dressing mixture.
