Ingredients

  • 2 x 420g cans chickpeas, drained
  • 1/2 cup extra virgin olive oil
  • 2 large oranges, rind finely grated, juiced
  • 3 garlic cloves, crushed
  • 1 tablespoon ground cumin
  • pinch of cayenne pepper
  • 2 tablespoons tahini
  • 3 bunches asparagus, trimmed
  • Savoury biscuits, to serve

Method

  • Step 1 Place chickpeas, oil, rind, 1/2 cup of juice, garlic, cumin, cayenne pepper and tahini into a food processor. Process until smooth. Taste and season with salt and pepper. Place into an airtight container. Refrigerate until required.
  • Step 2 Half-fill a frying pan with water. Bring to the boil over high heat. Add asparagus. Cook for 2 to 3 minutes or until bright green and just tender. Drain. Refresh under cold water. Refrigerate in an airtight container.
  • Step 3 At picnic, serve hommus with asparagus and savoury biscuits.
