Ingredients

  • 6 oranges
  • 375ml (1 1/2 cups) white wine
  • 300g caster sugar
  • 2 tablespoons finely sliced ginger
  • 60ml (1/4 cup) Grand Marnier or Curacao

Ginger cream

  • 300ml thickened cream
  • 2 tablespoons grated fresh ginger
  • 3 tablespoons icing sugar, sifted

Method

  • Step 1 Zest the oranges, reserving the zest, and use a small, sharp knife to remove the peel and pith from the oranges; then halve each orange horizontally and place in a serving dish. Set aside.
  • Step 2 Place the wine, sugar and 600ml water in a saucepan over medium-high heat and bring to the boil, stirring to dissolve the sugar. Add the orange zest and ginger and continue to boil, stirring, for about 5-6 minutes until the syrup has reduced by half. Remove from heat and pour in the liqueur. Stir to combine. Pour the hot syrup over oranges and refrigerate for at least 30 minutes to chill.
  • Step 3 Meanwhile, to make the ginger cream, place the cream, ginger and icing sugar in a bowl and whip until soft peaks form. Refrigerate for 15 minutes to chill, then serve with the oranges and syrup.
