Ingredients

  • 500ml Philadelphia Cream For Desserts, double cream alternative
  • 250g Cadbury Milk Chocolate Melts or Dark Chocolate Melts
  • 2 egg whites
  • 1 tablespoon caster sugar
  • 300g packet Classic OREO, ground to a powder ('dirt')
  • Spearmint leaf lollies
  • The Natural Confectionery Co Sours Squirms
  • 8 Speckle Pops

  • 250g Cadbury Milk Chocolate Melts
  • 100's and 1000's, for decoration

Method

  • Step 1 Combine the PHILLY and chocolate in a bowl and stir over simmering water until the chocolate has melted. Remove from heat and allow to cool.
  • Step 2 Beat the egg whites until soft peaks form; gradually beat in the sugar until dissolved to make a light meringue, and then gently fold through the chocolate mixture.
  • Step 3 Spoon a layer of OREO 'dirt'into 8 plastic cups. Divide the mousse between cups and then top with remaining 'dirt'. Decorate with spearmint leaves, Sours Squirms and Speckle Pops. Refrigerate until required.
  • Step 4 To make the Speckle Pops: Melt half the chocolate in a bowl over simmering water. Remove from the heat and add the remaining chocolate and stir until smooth.
  • Step 5 Lay 10 icy pole sticks on paper lined trays. Spoon 1tablespoon of melted chocolate onto one end of each stick. Spread the chocolate to form approx. 6 cm circle. (Ensure 1/3 of the stick is embedded in the chocolate).
  • Step 6 Decorate each pop with a sprinkle of 100’s and 1000’s or similar and allow to set at room temperature. Store in an airtight container until required.
