Ingredients

  • 1 thick pork sausage
  • 1 tablespoon extra virgin olive oil
  • 1 zucchini, coarsely grated
  • 4 eggs
  • 2/3 cup milk
  • 200g piece sourdough bread, crust removed, cut into 1.5cm pieces
  • 1 cup grated pizza cheese

Method

  • Step 1 Line 4 holes of a 3/4-cup- capacity Texas muffin pan with large paper cases (see notes).
  • Step 2 Squeeze sausage mince from casing. Heat oil in a large frying pan over medium-high heat. Add sausage mince. Cook, breaking up with a wooden spoon, for 6 to 8 minutes or until browned. Stir in zucchini. Remove from heat.
  • Step 3 Meanwhile, whisk eggs and milk in a large bowl. Season. Add sausage mixture, bread and cheese. Stir to coat. Divide bread mixture evenly among prepared pan holes. Cover and refrigerate overnight (see notes).
  • Step 4 Preheat oven to 200C/180C fan-forced.
  • Step 5 Remove muffin pan from fridge. Stand for 10 minutes. Bake for 30 minutes or until golden and set. Serve.
