How to make Papaya with lime yoghurt & ginger syrup

Ingredients

  • 80g (1/2 cup, lightly packed) brown sugar
  • 80ml (1/3 cup) water
  • 4 (x 1cm-thick) slices fresh ginger
  • 200g (3/4 cup) Greek-style natural yoghurt
  • 1 teaspoon finely grated lime rind
  • 2 teaspoons fresh lime juice
  • 1 (about 400g) ripe red papaya, deseeded, peeled, cut into wedges

Method

  • Step 1 Combine the sugar, water and ginger in a saucepan and bring to the boil over medium heat. Simmer for 5 minutes or until syrup is golden and thickens slightly. Set aside to cool slightly.
  • Step 2 Combine the yoghurt, lime rind and juice in a small bowl. Divide the papaya among serving plates. Drizzle with the warm syrup and top with a dollop of yoghurt mixture to serve.
