Ingredients

  • 1 1/2 kg large potatoes
  • Olive oil spray
  • Paprika, to dust

Method

  • Step 1 Preheat oven to 190C or 170C fan-forced and line a large baking tray with non-stick baking paper. Peel potatoes then cut them into pieces roughly the same size by cutting smaller potatoes in half and for slightly larger potatoes, cut about one-third from one end then cut the other piece in half.
  • Step 2 Place potatoes into a large saucepan and cover with water. Cover saucepan and bring to boil. Uncover immediately and cook 5 mins. Drain well. Cool slightly.
  • Step 3 Place potatoes flat side down on the baking tray. Using a fork, score lines into the potatoes to make a rough surface. Spray potatoes with oil then dust lightly with paprika and salt.
  • Step 4 Bake for 1 hr 15 mins until crisp and golden brown. Serve immediately.
