Ingredients

  • 2 egg whites
  • 125g parmigiano reggiano cheese, finely grated
  • 2 teaspoons plain flour

Method

  • Step 1 Preheat oven to 180°C. Line 2 baking trays with baking paper. Draw 4 circles, 6cm in diameter, on each sheet of paper.
  • Step 2 Whisk the egg whites in a clean, dry bowl until frothy. Add the cheese and flour. Stir until well combined. Place 1 teaspoonful of mixture on each circle. Spread with a flat-edged knife. Bake, a tray at a time, for 10-15 minutes or until golden. Using a flat-edged knife, lift each biscuit off baking tray and drape over a small rolling pin to shape.
  • Step 3 Set aside to cool until firm. Continue to cook the tuilles with the remaining mixture. Serve with cheese.
