Ingredients

  • 25g butter
  • 1 brown onion, halved, sliced
  • 8 cumquats, each sliced into 4 discs
  • 1 250g jar breakfast marmalade
  • 1 brioche loaf
  • 1 150g pkt cracked peppercorn pate log

Method

  • Step 1 Heat the butter in a small saucepan over medium-high heat until foaming. Add the onion and cumquats, and cook, stirring, for 8-10 minutes or until the onion begins to brown. Stir in the marmalade and cook, stirring, for 4-5 minutes or until marmalade melts. Remove from heat and set aside for 5 minutes to cool slightly.
  • Step 2 Meanwhile, preheat grill on high. Slice the brioche into eight 1cm-thick slices. Place brioche slices on a baking tray. Place under preheated grill (about 5cm away from the heat source) and cook until lightly toasted. Turn brioche slices and toast other side. Place on serving plates.
  • Step 3 Spread the pate evenly over toasted brioche. Top with a spoonful of cumquat marmalade and serve.
