Ingredients

  • 4 buerre bosc pears
  • 4 cups (1 litre) water
  • 1 cup (220g) caster sugar
  • 1 vanilla bean, split
  • Finely grated zest of 1 orange
  • 5 sheets filo pastry
  • 50g unsalted butter, melted
  • 1/3 cup (55g) ground almond meal
  • 120g dark chocolate, grated
  • Icing sugar for dusting

Method

  • Step 1 Preheat oven to 195°C. Peel, halve and remove core and stems from pears. Slice lengthways.
  • Step 2 Place water, sugar and vanilla bean in a medium saucepan. Stir over low heat until sugar dissolves. Bring to the boil. Add pear slices and ensure they are covered with liquid. Reduce heat, simmer for 10 minutes. Cool in syrup.
  • Step 3 Combine orange zest and 2-3 tablespoons of vanilla syrup. Lay one sheet of pastry short edge facing towards you, brush with butter and sprinkle with almond meal and grated chocolate. Top with another sheet of filo. Repeat layers, brushing each with butter and sprinkle with almond meal and chocolate.
  • Step 4 Remove pears from syrup, drain well and place along the short edge of pastry, leaving a 4cm border. Pour over orange zest mixture. Fold in sides and roll up to form a log. Transfer to a lined baking tray. Brush with remaining butter. Bake for 15 minutes or until golden brown. Dust with icing sugar. Cut into slices using a serrated knife and serve with creme fraiche or ice cream.
