Ingredients

  • 1 tablespoon olive oil
  • 1 leek, pale section only, thinly sliced
  • 3 bacon rashers, thinly sliced
  • 1 garlic clove, crushed
  • 500g pkt frozen peas
  • 1/2 cup (125ml) chicken stock
  • 1 tablespoon small thyme sprigs

Method

  • Step 1 Heat the oil in a large frying pan over medium heat. Add the leek and bacon and cook, stirring, for 5 mins or until leek softens.
  • Step 2 Add garlic and cook for 1 min or until aromatic. Add peas, stock and thyme. Cook, stirring, for 5 mins or until stock comes to the boil and peas are heated through. Remove from heat. Season. Serve.
