Ingredients

  • 375g penne rigate
  • 1/2 cup semi-dried tomatoes, roughly chopped
  • 1 tablespoon pine nuts
  • 1 tablespoon finely grated parmesan cheese
  • 1 garlic clove, quartered
  • 1 tablespoon lemon juice
  • 80g fresh ricotta cheese
  • 60g baby rocket
  • Shaved parmesan cheese, to serve

Method

  • Step 1 Cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain, reserving 1/3 cup cooking liquid. Return to pan.
  • Step 2 Meanwhile, process tomato, pine nuts, grated parmesan, garlic and lemon juice until almost smooth. Add ricotta. Process until combined.
  • Step 3 Add tomato mixture and reserved cooking liquid to pasta. Toss to combine. Add rocket. Toss to combine. Serve topped with shaved parmesan.
