Ingredients

  • 600g chicken thigh fillets, trimmed, cubed
  • 24 grape tomatoes
  • 2 (300g) red onions, cut into wedges
  • 2 tablespoons olive oil
  • 1 garlic clove, crushed
  • Lettuce leaves, to serve
  • Basil pesto, to serve

Method

  • Step 1 Thread chicken, tomatoes and onion onto 8 skewers. Place in a dish. Combine oil and garlic in a small bowl. Brush over skewers.
  • Step 2 Preheat a barbecue plate or chargrill on medium heat. Cook skewers, turning, for 8 to 10 minutes or until browned and cooked.
  • Step 3 Serve with lettuce leaves and pesto.
