Ingredients

  • 700g sebago potatoes, unpeeled, cut into 1cm chips
  • 1/4 cup extra virgin olive oil
  • 3 teaspoons dried Italian herbs
  • 400g beef mince
  • 80g piece mozzarella, cut into 4 slices
  • 8 thin slices spicy salami
  • 4 Italian-style crusty bread rolls, split
  • 30g baby rocket
  • 2 tomatoes, thinly sliced
  • 8 large fresh basil leaves

Method

  • Step 1 Preheat oven to 220C/200C fan-forced. Line a baking tray with baking paper. Line another baking tray with foil.

  • Step 5 Once potato chips are cooked, remove from oven. Preheat grill on medium-high. Place patties and salami under grill. Grill for 5 minutes or until mozzarella melts and salami is crisp.
  • Step 6 Place roll bases on serving plates. Top with rocket, tomato, patties, salami and basil. Sandwich with roll tops. Serve burgers with potato chips.
