Ingredients

  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons ground paprika
  • 2 garlic cloves, crushed
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 8 Coles Australian RSPCA Approved Chicken Drumsticks
  • 1 red onion, cut into wedges
  • 1/4 cup (40g) pomegranate seeds
  • 1/4 cup (35g) pistachio, toasted, coarsely chopped
  • Greek-style yoghurt, to serve
  • Coriander leaves, to serve

Method

  • Step 1 Preheat oven to 200C.
  • Step 2 Combine the cumin, coriander, paprika, garlic, vinegar and oil in a large ceramic dish. Add the chicken and toss to coat.
  • Step 3 Place the chicken in a large baking dish with the onion. Cook for 40 mins or until the chicken is cooked through.
  • Step 4 Sprinkle chicken with pomegranate seeds and pistachio. Serve with the yoghurt and coriander leaves.
