Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion, thinly sliced
  • 200g sliced mushrooms
  • 450g Coles Trim Pork Fillets, fat trimmed, thinly sliced
  • 1 tablespoon smoked paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 1/3 cup Coles Brand Sour Cream
  • 1 tablespoon chopped oregano, plus extra leaves to serve
  • Mashed potato, to serve

Method

  • Step 1 Heat the oil in a large frying pan over medium heat. Cook the onion, stirring, for 4 mins or until golden. Increase heat to high. Add the mushrooms, pork, paprika and caraway seeds. Cook, stirring, for 4-5 mins or until pork starts to brown. Stir in the tomato paste. Season.
  • Step 2 Stir in the sour cream and chopped oregano. Cook, stirring, for 1 min or until sauce begins to bubble.
  • Step 3 Divide mash among plates. Spoon over pork. Sprinkle with extra oregano.
