Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon MasterFoods lemon pepper seasoning
  • 600g kipfler potatoes, scrubbed, roughly chopped
  • 700g medium cooked prawns, peeled, deveined
  • 2 celery stalks, trimmed, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1 baby cos lettuce, leaves separated, torn
  • 1/4 cup small fresh mint leaves

Herb dressing

  • 1/2 cup whole-egg mayonnaise
  • 1 garlic clove, crushed
  • 1/3 cup sour cream
  • 2 tablespoons finely chopped fresh dill
  • 2 tablespoons finely chopped fresh mint leaves

Method

  • Step 1 Preheat oven to 200C/180C fan-forced. Place oil, seasoning and potato on a baking tray. Toss to coat. Roast for 35 minutes or until golden and tender. Cool.
  • Step 2 Make dressing Combine 1/4 cup cold water, mayonnaise, garlic, sour cream, dill and chopped mint in a bowl.
  • Step 3 Place potato, prawns, celery, onion, lettuce and mint leaves in a large bowl. Toss to coat. Serve with dressing.
