Ingredients

  • 24 (about 1kg) medium green king prawns
  • 8 slices prosciutto
  • 2 tablespoons extra virgin olive oil
  • Fresh oregano leaves, to serve

Romesco Sauce

  • 250g chargrilled red capsicum
  • 1 vine-ripened tomato, chopped
  • 1/4 cup blanched almonds, toasted
  • 1/4 cup fresh flat-leaf parsley leaves
  • 1 small garlic clove, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon sweet paprika
  • Pinch cayenne pepper

Method

  • Step 1 Make Romesco Sauce. Place all of the ingredients in a food processor. Process until combined and almost smooth. Season with salt and pepper.
  • Step 2 Peel and devein prawns, leaving tails intact. Cut each slice of prosciutto into thirds lengthways. Wrap 1 piece of prosciutto around each prawn, leaving the tails exposed.
  • Step 3 Heat oil in a large frying pan over medium-high heat. Cook prawns, in 2 batches, turning, for 5 minutes or until golden and just cooked through.
  • Step 4 Serve prawns with romesco sauce and sprinkled with oregano.
